Tomato Soup Recipe


Tomato Soup:

Easy Tomato Soup Recipes:

Ø  Method 1:
Preparation time: 15-20 minutes.
Servings: 4-5 people.

Ingredients:
o   Tomatoes: 6-7 Tomatoes
o      Basil leaves: 2-4 
o     Bay Leaves: 2-3
o     Garlic: 8 chopped
o     Clove oil or butter: 2 tablespoon (tsp)
o     Celery: 2 finely chopped
o     Oregano: ¼ tsp
o     Sugar: 1 Tsp


Steps:
o Make a cut in the form of an x on the bottom of each tomato then add them in boiling water and boil for 1-2 minutes. Remove them and put them in a bowl of ice cold water for 3-4 minutes and peel the skin off with your hands.
o   Roughly chop the tomatoes and grind them in a grinder to form a tomato paste.
o   Heat the 2 tablespoon olive oil or butter in a pan.
o   After the oil is hot, add one or two bay leaves, one tsp chopped garlic and cook for 1 or 2 minutes.    
o   Strain the tomatoes paste to remove the seeds, etc and then add the paste to the hot pan and add salt, chilli powder as per taste and oregano, ¼ tsp black pepper powder or crushed black pepper.
o   Add 2 tsp vinegar or lemon juice (optional).
o   Cook for 5-6 minutes then add 2-3 basil leaves add 250 ml water or as per the consistency you want.
o   Cook until soup thickens and then add 1 tsp fresh cream.  

Ø  Method 2:
In this recipe, we prepare tomato soup without peeling tomatoes.

Ingredients:

o   Tomatoes: 10-12
o   Butter: 2 tsp
o   Basil leaves: 2-4
o   Bay Leaves: 2-3
o   Onion: 2 chopped
o   Garlic: 8 chopped
o   Celery: 2 finely chopped (optional)
o   Potatoes:1
o   Carrot: 2 chopped
o   Sugar: 2 teaspoons
o   Lemon juice: 1-2 Tsp
o   Black pepper: ¼ tsp

Preparation time: 15-20 minutes.
Servings: 4-5 people

Steps:


o             Roughly chop the tomatoes into small pieces.
o   Chop onion, garlic and carrot into small pieces.
o   Heat the 2 tablespoon olive oil or butter in a pan.
o   After the oil is hot, add one or two bay leaves, chopped garlic, onion, carrot and cook for 2 minutes on low to medium flame. 
o   Now add chopped potatoes, cook for 2-3 minutes then add chopped tomatoes and salt and cook for 5 minutes on low-medium flame until tomatoes are cooked properly. Add ½ litre water and cook for 5 more minutes. You can add less water if you want thick consistency in the soup.  
o   Cool down the mixture and grind it in a juicer/grinder. 
o   Strain the mixture and collect it in a hot pan and boil again after adding black pepper powder or crushed black pepper, sugar and lemon juice or vinegar (optional). 
o   Cook for 5-6 minutes then add 2-3 basil leaves and water if required.
o   Cook until soup thickens then add 1 tsp fresh cream (optional).
